Restaurant partners Troy Selby and Wheaton Augur opened 520 Grill on 05/20/10 in downtown Aspen. The longtime friends and fellow chefs had been considering starting a business for several years before their vision came to fruition. In the winter of 2010, they decided to collaborate on a professional venture, setting off on a Colorado road trip to research restaurant concepts and sample menus across the state. By the time they returned to Aspen, they'd decided precisely what to do – create a roadside diner-inspired restaurant offering creative and affordable quick-serve fare.
